Potatoes & Filling:
  • 4 large potatoes
  • 300 g chopped beef
  • 100 g shredded cheese (cheddar, mozzarella, or a mix)
For the Creamy Onion Sauce:
  • 1 medium onion finely chopped
  • ⅓ cup heavy cream or a mix of milk & cream
  • 1 tablespoon butter
  • Salt to taste
For the Beef:
  • 2 tablespoon paprika
  • Salt & black pepper to taste
  • 1 tablespoon garlic powder
  • 1 onion chopped
  • 1 tablespoon tomato paste
  • Hot water as needed
For Garnish:
  • Fresh green onions chopped

Method
 

  1. Step 1: Prepare the Potatoes
    Rub the potatoes with oil and salt. Poke holes using a fork, then wrap them in aluminum foil.
  2. Step 2: Bake the Potatoes
    Place in a preheated oven at 200°C (392°F) for 1 hour.
  3. Step 3: Cook the Beef
    In a pan, sauté chopped onions. Add the chopped beef and season with paprika, garlic powder, salt, and pepper. Pour in a little water, cover, and cook for 10 minutes. Add tomato paste and about 360 ml (1½ cups / 12 fl oz) hot water. Cover and simmer for 30–40 minutes, checking every 15 minutes and adding water if needed.
  4. Step 4: Prepare the Creamy Onion Sauce
    Remove the beef from the pan. In the same pan, melt butter, add chopped onions, and pour in heavy cream. Stir until smooth.
  5. Step 5: Assemble the Stuffed Potatoes
    Remove baked potatoes from the oven. Cut off the top about ¾ of the way up and scoop out the inside into a bowl. Mash the potato filling, season, and mix in chopped green onions.
  6. Step 6: Fill the Potatoes
    In the empty potato shells, layer shredded cheese, mashed potatoes, cooked beef, creamy onion sauce, and more shredded cheese on top.
  7. Step 7: Bake Again
    Place stuffed potatoes back in the oven and bake for 10–15 minutes, until the cheese melts and turns golden.
