Ingredients
 
 

For the ground beef mix:
  • ground beef
  • 1 onion finely chopped
  • fresh parsley finely chopped
  • 1 tsp salt adjust to take
  • 1 tsp black pepper
  • 2 tbsp paprika
For the white sauce:
  • 1/2 cup greek yogurt
  • 1 grated cucumber squeezed to remove excess water
  • fresh dill finely chopped
  • 1-2 tsp lemon juice to taste
  • 1 tsp garlic powder
  • 1/4 tsp salt to taste
For the spicy sauce:
  • 1 tsp harissa or more for extra heat
  • 1 tsp sriracha
  • 1-2 tsp water to thin if needed
For the salad:
  • 1-2 red onion thinly sliced
  • 1 tsp sumac
  • fresh parsley chopped
Others:
  • 4 Lebanese Flatbreads
  • pickles sliced
  • 1-2 tsp olive oil

Equipment

  • Large skillet or frying pan

Method
 

  1. Prepare the kofta mix: In a blender or food processor, mix the ground beef, finely chopped onion, finely chopped parsley, salt, black pepper, and paprika until well combined.
  2. Prepare the flatbread: Cut the Lebanese flatbread in half and open it. Spread a thin, even layer of the raw kofta mix onto one half. Press lightly with a fork to spread the meat evenly.
  3. Form the wrap: Cover with the second half of the flatbread to make a closed sandwich.
  4. Grill the wrap: Grill in a sandwich press or on a grill for 5–10 minutes until golden and cooked through.
  5. Make the white sauce: In a bowl, mix Greek yogurt with grated cucumber, chopped dill, garlic powder, salt, and lemon juice until smooth.
  6. Make the spicy sauce: Mix harissa, sriracha, and a little water until slightly runny.
  7. Prepare the salad: Combine thinly sliced red onion with sumac and chopped parsley.
  8. Assemble the wrap: Once grilled, open the spread the white sauce, drizzle the spicy sauce, olive oil, and the salad.
    Close the wrap and enjoy warm.
