Sushi Burger with Spicy Tuna (Onigirazu)

Nori-wrapped sushi rice sandwiches layered with spicy tuna, avocado, cucumber and cream cheese.
Prep Time 25 minutes
Cook Time 20 minutes
Total Time 45 minutes
Servings: 4 sushi burgers

Ingredients

  • 300 g uncooked sushi rice
  • water amount specified on the rice package
  • 1 tablespoon rice vinegar
  • 4-8 nori sheets 1–2 per burger
  • 150 g canned tuna drained
  • 1 small red onion about 70 g, finely chopped
  • 1 avocado sliced
  • ½ cucumber sliced
  • 1 small carrot thinly sliced or shredded
  • 60 g cream cheese
  • 3 tablespoon mayonnaise for the tuna
  • Sriracha to taste
  • 4-5 tablespoon mayonnaise for the sauce
  • 3 tablespoon soy sauce for the sauce

Method

  1. Rinse the sushi rice and cook according to the package instructions, using the amount of water recommended for your brand. Gently fold in the rice vinegar and let the rice cool until comfortable to handle.
  2. Mix the drained tuna with the red onion, 3 tablespoons mayonnaise and Sriracha to taste. In another bowl, stir the remaining mayonnaise with the soy sauce.
  3. Place a nori sheet on a piece of food wrap with one corner pointing toward you. Form a compact square of rice in the centre. Add tuna, avocado, cucumber, cream cheese, carrot and a little sauce, then top with another thin layer of rice. Divide the fillings across four burgers.
  4. Fold the nori corners over the filling. If needed, use a second nori sheet to enclose any gaps. Wrap snugly in food wrap and let stand for 5–10 minutes so the nori softens and the layers hold together.
  5. Unwrap and cut in half with a sharp knife, wiping it between cuts. Serve promptly or refrigerate. Total time is approximate and depends on your rice’s cooking and cooling time.
