Ingredients
 
 

  • 3 tbsp unsalted butter cut into cubes
  • olive oil enough to coat the pan
  • 2 yellow onions sliced
  • 1 red onion sliced
  • 4-5 garlic cloves minced
  • 1 tbsp tomato paste
  • 1 tsp chili oil adjust to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • paprika to taste
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • Salt and Black pepper to taste
  • 3/4 cup soy cream or heavy cream
  • Grated parmesan, as much as you like
  • Cooked spaghetti
  • Optional: chopped parsley, more parmesan, extra chili oil for serving

Equipment

  • Pasta pot
  • Wooden spoon or spatula

Method
 

  1. Step 1: Caramelize the Onions
    Melt butter in a pan with a bit of olive oil. Add the yellow and red onions and cook until golden and caramelized.
  2. Step 2: Add the Garlic and Tomato Paste
    Stir in minced garlic for a minute. Pour in a bit of pasta water or hot water, then add tomato paste and chili oil. Stir to combine.
  3. Step 3: Season the Sauce
    Add garlic powder, onion powder, paprika, ground coriander, turmeric, salt, and black pepper. Mix well.
  4. Step 4: Add Cream and Cheese
    Pour in the cream and stir until smooth. Add grated parmesan and mix until fully incorporated.
  5. Step 5: Combine with Pasta
    Toss the cooked spaghetti in the sauce until evenly coated.
  6. Step 6: Serve and Garnish
    Serve immediately with chopped parsley, extra parmesan, and a drizzle of chili oil on top.
