This Japanese-style potato salad is creamy and comforting, with cucumber, eggs and crisp beef bacon.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings: 2 servings

Ingredients

For the Salad
  • 2 potatoes
  • 4 eggs (3 cooked until set, 1 for the topping)
  • ½ cucumber, thinly sliced
  • A few strips of beef bacon (or any kind)
For the Dressing
  • 2 tablespoon Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon mustard
  • 5 tablespoon soy milk (or regular milk)
  • 1 teaspoon black pepper
  • Salt, to taste

Method

  1. Boil the potatoes until fork-tender, about 20 minutes depending on size, then drain. Cook three eggs until the whites and yolks are set; cook the fourth to your preferred firmness for the topping. Cool the eggs in cold water and peel.
  2. Cook the beef bacon in a pan until crisp and cooked through, following its package instructions. Chop into bite-sized pieces.
  3. Whisk the yogurt, mayonnaise, mustard, pepper and a little salt. Add the milk gradually until creamy; you may not need all 5 tablespoons.
  4. Roughly mash the drained potatoes and three peeled eggs into the dressing. Fold in the sliced cucumber and chopped bacon. Taste and adjust seasoning.
  5. Halve the reserved egg and place it on top. Serve promptly, or refrigerate the salad until serving and add the topping at the end.
