Ingredients
 
 

For the Chicken Marinade:
  • 700-800 g chicken breast
  • 2 tbsp Skyr or plain yogurt
  • 1 tbsp olive oil
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp grated parmesan
  • 1 tbsp dried parsley
For the Sauce:
  • 50-70 g butter
  • 1 tbsp chili flakes
  • 3 garlic cloves finely chopped
  • 2 tbsp fresh parsley chopped
  • 2-3 tbsp grated parmesan
  • pinch of salt

Method
 

  1. Step 1: Prepare the Chicken
    Cut the chicken breasts into small, even cubes. Place in a bowl and add Skyr, olive oil, smoked paprika, garlic powder, onion powder, lemon juice, salt, pepper, parmesan, and dried parsley. Mix well to coat the chicken evenly.
  2. Step 2: Marinate
    Let the chicken marinate for at least 1 hour (overnight for more flavor).
  3. Step 3: Thread the Skewers
    Thread the marinated chicken pieces onto skewers.
  4. Step 4: Bake the Skewers
    Place the skewers on a grill pan or a baking rack over a baking sheet. Bake in a preheated oven at 200°C (392°F) for 25 minutes, turning halfway through for even cooking.
  5. Step 5: Prepare the Sauce
    In a saucepan, melt the butter gently. Add garlic, chili flakes, fresh parsley, parmesan, and a pinch of salt. Stir until well combined and fragrant.
  6. Step 6: Coat the Skewers
    Once the skewers are out of the oven, generously coat them with the garlic-parmesan butter sauce.
