Ingredients
 
 

  • 1 medium potato thinly sliced
  • 2 eggs whisked
  • 30 g mozzarella cheese shredded
  • A handful of arugula or lamb's lettuce
  • 1 tomatoe sliced
  • 50 g fresh mozzarella sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp onion powder

Method
 

  1. Heat the Pan
    • In a non-stick pan, heat butter and olive oil over medium heat.
  2. Cook the Potato Base
    • Thinly slice the potato and arrange the slices in a circular pattern in the pan, overlapping slightly.
    • Cover with a lid and cook for 5 minutes, until golden and soft.
  3. Add the Eggs & Cheese
    • Whisk the eggs with a pinch of salt, then pour evenly over the potatoes.
    • Sprinkle shredded mozzarella cheese on top and cover for 1–2 minutes, until the cheese begins to melt.
  4. Add the Toppings
    • Layer with arugula, tomatoes, sliced mozzarella , and your preferred seasonings.
  5. Fold & Serve
    • Fold the potato layer in half like a sandwich and cook for another 30 seconds per side.
    • Transfer to a plate, slice in half, and enjoy warm!
