- Heat the Pan• In a non-stick pan, heat butter and olive oil over medium heat.
- Cook the Potato Base• Thinly slice the potato and arrange the slices in a circular pattern in the pan, overlapping slightly.• Cover with a lid and cook for 5 minutes, until golden and soft.
- Add the Eggs & Cheese• Whisk the eggs with a pinch of salt, then pour evenly over the potatoes.• Sprinkle shredded mozzarella cheese on top and cover for 1–2 minutes, until the cheese begins to melt.
- Add the Toppings• Layer with arugula, tomatoes, sliced mozzarella , and your preferred seasonings.
- Fold & Serve• Fold the potato layer in half like a sandwich and cook for another 30 seconds per side.• Transfer to a plate, slice in half, and enjoy warm!
