- Step 1: Cook the PastırmaIn a non-stick pan over medium heat, cook pastırma or beef bacon until slightly crispy.
- Step 2: Layer Pastırma, Cheese, and EggsPlace the cooked pastırma in the pan, then add 2 slices of cheddar cheese on top. Pour all the beaten eggs over the pastırma and cheese, and cook gently until the eggs are just set but still creamy.
- Step 3: Assemble the Folded ToastPlace two slices of toast on top of the cooked eggs in the pan. Carefully flip the toast so the eggs are now on the top side. Add fresh salad greens and sliced tomatoes on the eggs, then fold the eggs to the side inside the toast. Finally, flip the top toast slice over the other to create a folded sandwich.
- Step 4: Finish and ServePress gently and cook for another minute if desired to slightly crisp the toast. Serve immediately while warm.
