Total Time 40 minutes
Servings: 10 tacos

Ingredients

For the Kofta
  • 500–700 g (1.1–1.5 lb) ground beef
  • 1 yellow onion
  • Fresh parsley, a small handful
  • 1 tablespoon garlic, minced
  • 1 tablespoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon 7 spice (or allspice)
  • 10 mini Lebanese breads (or mini tortillas)
  • Avocado oil for pan-frying
For the Sumac Salad
  • 1 cucumber, finely diced
  • Fresh parsley, chopped
  • 1 red onion, thinly sliced
  • 1 teaspoon sumac
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the Garlic Sauce
  • ½ cup (115 g / 4 oz) mayonnaise
  • ¼ cup (60 g / 2.1 oz) Greek yogurt
  • 1 tablespoon garlic powder
  • ½ lemon, juiced
  • ½ teaspoon salt
  • 1 teaspoon dried parsley
  • 2–3 garlic cloves, finely grated or crushed
  • 1–2 tablespoon water (to loosen texture)
For Topping
  • Shredded mozzarella
  • Harissa or Sriracha

Method

  1. Finely chop the yellow onion, parsley and garlic. Mix with the ground beef, paprika, salt, pepper and seven spice until evenly combined.
  2. Mix the cucumber, red onion, parsley, sumac, salt and pepper for the salad. In another bowl, whisk the mayonnaise, yogurt, garlic powder, lemon juice, salt, dried parsley and fresh garlic. Add water gradually until spoonable.
  3. Press a thin layer of beef onto one side of each mini flatbread. Heat a little avocado oil in a pan over medium heat. Cook meat-side down for about 4–5 minutes, or until the beef is browned and reaches 71°C (160°F). Work in batches and adjust the time to the thickness.
  4. Turn the breads over, add mozzarella to the cooked beef and fold gently in half. Toast briefly on both sides until the cheese melts and the bread is golden.
  5. Open each taco slightly, add garlic sauce and sumac salad, and finish with harissa or Sriracha if desired. Serve immediately.
