Ingredients
 
 

Chicken Shawarma:
  • 2 large chicken breasts cut into thin strips
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 tbsp lemon juice
  • 1/2 tsp paprika
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 tsp chili powder optional for heat
  • 1/2 tsp garlic powder
  • Fresh parsley chopped
Garlic Sauce:
  • 3 tbsp plain yogurt
  • 2 tbsp mayonnaise
  • 1-2 garlic cloves finely minced
  • 1 tbsp fresh parsley chopped
Sumac Onions:
  • 1 medium red onion thinly sliced
  • 1 tsp sumac powder
  • 1 tbsp chopped parsley
  • 1 tbsp lemon juice
Extras for the Wrap:
  • 4-5 wraps approx. 26 cm or 10 inch in diameter
  • 1-2 tsp harissa or substitute with sriracha for heat
  • 1 small cucumber thinly sliced
  • 1-2 medium tomatoes sliced
  • 150-200 g french fries cooked

Equipment

  • Mixing bowl
  • Skillet or grill pan
  • Cutting board
  • Knife

Method
 

  1. Marinate the Chicken
    In a bowl, combine:
    Chicken strips
    2 tbsp olive oil
    1 tbsp tomato paste
    Juice of 1 lemon
    Seasoning: paprika, turmeric, black pepper, salt, chili, and garlic powder
    Mix well and let marinate for at least 30 minutes (or overnight in the fridge for best flavor).
  2. Cook the Chicken
    Heat a skillet or grill pan over medium-high heat.
    Add the marinated chicken.
    Cook for 6–8 minutes, stirring occasionally, until chicken is golden and cooked through.
    Remove from heat and sprinkle with chopped parsley.
  3. Make the Garlic Sauce
    In a small bowl, mix:
    3 tbsp yogurt
    2 tbsp mayonnaise
    Minced garlic (adjust to taste)
    1 tbsp chopped parsley
    Taste and adjust for garlic intensity or tang.
  4. Prepare the Sumac Onions
    In another bowl:
    Add sliced red onion, 1 tsp sumac, 1 tbsp parsley, and juice of ½ lemon.
    Toss until onions are well coated.
    Let sit for a few minutes to soften and absorb flavor.
  5. Assemble the Wraps
    For each wrap:
    Lay a 26 cm (10") wrap on a flat surface.
    Spread 1–2 tbsp garlic sauce down the center.
    Add a layer of cooked chicken.
    Add a spoonful of sumac onions.
    Add tomato and cucumber slices.
    Add a handful of hot French fries.
    Drizzle more garlic sauce and a bit of harissa or sriracha (optional for heat).
  6. Wrap and Toast
    Fold the bottom of the wrap up, then fold in the sides to enclose the filling.
    Heat a dry skillet over medium heat.
    Place the wrap seam-side down and toast for 1–2 minutes per side, until golden and slightly crispy.
  7. Serve
    Slice the wrap in half, serve hot with extra fries, pickles, or salad on the side.
